{"id":11678036,"date":"2026-02-22T11:00:03","date_gmt":"2026-02-22T16:00:03","guid":{"rendered":"https:\/\/globalnews.ca\/?p=11678036"},"modified":"2026-02-22T23:51:35","modified_gmt":"2026-02-23T04:51:35","slug":"recipe-roasted-octopus-black-garlic-puree","status":"publish","type":"post","link":"https:\/\/globalnews.ca\/news\/11678036\/recipe-roasted-octopus-black-garlic-puree\/","title":{"rendered":"Recipe: Roasted octopus with black garlic puree"},"content":{"rendered":"<p>Roasted Octopus<br \/>\nBlack garlic puree, \u2018Nduja sofrito, sourdough<br \/>\nServes: 2 (appetizer)<\/p>\n<p><strong>Octopus <\/strong><br \/>\n2 pounds Australian Fremantle octopus (or BC octopus), cleaned<br \/>\nZest of 1 lemon (wide strips, no pith)<br \/>\nZest of 1 orange (wide strips, no pith)<br \/>\n2\u20133 sprigs fresh tarragon<br \/>\n2\u20133 sprigs fresh thyme<br \/>\nSalt<br \/>\n2 tablespoons canola oil (for roasting)<br \/>\n1\u20132 tablespoons sherry vinegar<\/p>\n<p><strong>Instructions<\/strong><br \/>\n1. Clean the Octopus<br \/>\nPlace the raw octopus in a large bowl and sprinkle generously with kosher salt. Massage and scrub the octopus<br \/>\nuntil the texture feels smooth and slightly firm, about 2\u20133 minutes. Rinse thoroughly under cold running water.<br \/>\n2. Blanch<br \/>\nBring a large pot of salted water to a boil. Submerge the octopus for 1\u20132 minutes, just until the tentacles curl. Remove and immediately transfer to an ice bath to cool completely.<br \/>\n3. Sous Vide Cook<br \/>\nPlace the chilled octopus in a vacuum bag (or heavy-duty zip-top bag using the water displacement method). Add lemon and orange zest, tarragon, and thyme. Remove all air and seal.<br \/>\nCook in a water bath at 185\u00b0F (85\u00b0C) for 2 hours. Remove from the bag and transfer to an ice bath to chill completely.<br \/>\n4. Roast &amp; Finish<br \/>\nHeat canola oil in a large skillet over medium-high heat. Pat the octopus dry. Sear for 3\u20135 minutes per side, or until well browned and lightly crisped on the edges.<br \/>\nDeglaze the pan with 1\u20132 tablespoons sherry vinegar, turning the octopus to coat.<br \/>\nSlice into pieces.<\/p>\n<p>Black Garlic Puree<br \/>\n2 cups yellow onions, peeled and thinly sliced (about 2 medium onions)<br \/>\n1\u00bd tablespoons garlic, peeled and thinly sliced (3\u20134 cloves)<br \/>\n1 tablespoon canola oil<br \/>\n\u00bc cup black garlic cloves (about 8\u201310 cloves)<br \/>\n1\u00bd teaspoons sherry vinegar<br \/>\nSalt, to taste<\/p>\n<p><strong>Instructions<\/strong><br \/>\n1. In a medium pot over medium heat, add the canola oil, sliced onions, and sliced garlic. Cook, stirring<br \/>\noccasionally, until softened and translucent, about 8\u201312 minutes. Do not allow the mixture to brown \u2014 reduce heat if needed.<br \/>\n2. Add the cooked onion mixture to a blender along with the black garlic and sherry vinegar. Blend until<br \/>\ncompletely smooth.<br \/>\n3. Pass the pur\u00e9e through a fine-mesh strainer for a silky texture. Season with salt to taste.<\/p>\n<p>\u2018Nduja Sofrito<br \/>\n3 tablespoons finely diced shallots (about 1 small shallot)<br \/>\n2 tablespoons \u2018Nduja, casing removed<br \/>\n\u00bc teaspoon smoked paprika<br \/>\n1 garlic clove, minced<br \/>\n2 tablespoons extra virgin olive oil<br \/>\n\u00bd cup roasted red pepper, peeled, seeded, and finely diced<br \/>\n1 tablespoon sherry vinegar<br \/>\nSalt, to taste<\/p>\n<p><strong>Instructions<\/strong><br \/>\n1. In a saut\u00e9 pan over medium-low heat, combine the olive oil, N\u2019duja, shallots, and garlic. Cook gently, stirring frequently, until the shallots are soft and translucent, about 5\u20137 minutes. Avoid browning.<br \/>\n2. Add the smoked paprika and cook for 30\u201360 seconds, stirring constantly to prevent scorching.<br \/>\n3. Stir in the diced roasted red peppers and cook for another 2\u20133 minutes to meld the flavors.<br \/>\nRemove from heat and stir in the sherry vinegar. Season with salt to taste.<\/p>\n<p>Sourdough<br \/>\n4 slices sourdough bread<br \/>\n2\u20133 tablespoons olive oil<br \/>\n1 garlic clove, peeled<\/p>\n<p><strong>Instructions<\/strong><br \/>\n1. Heat the olive oil in a large skillet over medium heat.<br \/>\n2. Add the sourdough slices and cook for 2\u20133 minutes per side, or until golden brown and crisp.<br \/>\n3, Remove from the pan and immediately rub one side of each slice with the peeled garlic
